I can highly recommend Mary Berry's (of Great British Bake Off fame) recipe for Victoria Sandwich. Not only is this cake easy to bake and delicious to eat but the recipe is free (if you want to try it click on the link).

The smell of cake baking in the oven is definately one of my favourite things along with licking the bowl afterwards (I know you're not supposed to!).
